Short on time in the Mile High City

After I worked for a few hours, we just had the rest of the day and were flying out in the morning. Eric didn't share my enthusiasm for more exploration and was content with staying at the hotel for TV and a nap.
For lunch, I REALLY needed to find a place that would entice Eric into driving me around for a few hours so I could take more pictures.
Enter Uber Sausage. As soon as I said the word "sausage", he was in.
The area looked a little sketchy when we arrived, but I remembered reading online that East Colfax was affectionately known as the gourmet ghetto...
The interior was sparse and seemed to be more of a take-out place, but there were a few tables and the people were extremely friendly. They helped us navigate the menu of sandwiches comprised of artisan sausages and locally baked breads.
I tried "The Club" - Roasted rosemary chicken sausage, Swiss cheese, bacon, avocado, tomato, arugula and tarragon aioli.
Eric tried "The Greek" - Greek lamb sausage, feta cheese, piquillo peppers, red onions, capers, tomatoes, cucumbers, arugula and tzatziki sauce.
Both were delicious!
After lunch, I wanted to take advantage of the great weather so we visited City Park nearby. We walked around for a bit, people watching and taking in the scenery.
At one point, I heard crunching noises all around me and looked down to see squirrels EVERYWHERE. They were so cute!
This is my ever-patient husband waiting on me to run around and take pictures :-)
Back at the hotel, I was lucky to get close to one of the many rabbits that frequented the area.
